Since Hippocrates, in his writings, acclaimed the barley thanks its medicinal properties. “Refreshing and easy to extract, it does not involve astringency or bad agitation, nor swells the stomach.” Indeed, the benefits praised by Hippocrates are not far from reality. Due to the presence of fibers, barley is an excellent regulator of intestinal function, particularly suitable for constipation (stimulating properties). Recently, it has been observed that some barley-derived substances are able to inhibit bad cholesterol synthesis by liver, exercising their cholesterol-lowering properties.
Puffed Barley. It may contains traces of gluten, soy, milk and nuts. Store in a cool and dry place away from direct sunlight.
-400g cow’s milk ricotta
-2 cups of coffee espresso
-1 spoon of liquor
-80g caster sugar
-40g Puffed Barley
-Honey or chocolate topping
Put ricotta and sugar in a bowl and reduce them to cream with the help of a whisk. Incorporate coffee and liquor and mix until it has a soft and homogeneous mixture. Take 4 cups for dessert, put 2 spoons of Puffed Barley in each one and distribute over them the cream. Cover each cup with kitchen wrap and place in the fridge for at least 2 hours. Serve after having sprinkled surface with caramel or chocolate topping, or simply accompanied by chocolate, even loose.
